TRIED ‘N’ TRUE: A nutritious, delicious after-school snack

We are always looking for something good and easy to give to the kids when they get home from school. I know I always was.

When grandkids came along they would help me make all kinds of bars. This recipe is from Pam from Sullivan Extension.

Easy Apple Raisin Bars


1⁄2 cup raisins (can use more)

1  20-oz. can apple pie filling

1⁄2 cup nuts (chopped)

1⁄2 teaspoon cinnamon

1⁄2 teaspoon nutmeg

Crumb mixture:

2 cups flour

1 1⁄2 cup sugar

1 1⁄4 cup margarine (or butter)

2 cups oats (quick)

1 teaspoon soda

• Combine flour, sugar, oats, margarine and soda. Mix well.

• Reserve 1 1⁄2 cup of mixture.

• Press remaining mixture into ungreased 9- by 13-inch pan.

• Bake 350 degrees for 15 to 20 minutes or until light brown.

• Combine raisins, pie filling, nuts, cinnamon and nutmeg. Mix well.

• Spread evenly over hot crust.

• Sprinkle with reserved crumb mixture.

• Bake for another 30 minutes.

• Cool completely before cutting into bars.

Note: You can use sweetener for sugar and also use sugar-free apple pie filling. It’s a delicious, nutritious after-school snack. Makes about 2 1⁄2 dozen.
