TRIED ā€™Nā€™ TRUE: Thanks to an old neighbor for this cookie recipe

TERRE HAUTE — A few years ago we had a church meeting for women at Casey Methodist Church.

They always have refreshments in the morning, and dessert at noon. We have a lot of fun and fellowship. I love going to different churches. At Casey, when I lived in Oilfield, one of my neighbors was Louise Burkybile. She had this cookie recipe and it was so good. The boys weren’t heapt up on coconut, but they liked these. Thanks, Louise.

Coconut Oatmeal Cookies

1 cup flour

1⁄2 teaspoon baking powder

1⁄2 teaspoon salt

1⁄2 teaspoon soda

1⁄2 cup butter or shortening

1⁄2 cup sugar

1⁄2 cup brown sugar (packed)

1 egg

1 teaspoon vanilla

1⁄2 cup quick oats

1 cup coconut

• Stir together dry ingredients. Cream butter. Gradually add sugars and cream until light and fluffy. Add egg and vanilla, beat well. Add flour mixture in 4 parts, beating until just smooth after each addition. Mix in oats, coconut. Drop by teaspoonful onto ungreased sheet. Bake 375 degrees for 9-12 minutes or until browned.
