TRIED ’N’ TRUE: A well-loved and well-used cookie recipe

Boy, this recipe has been used so much! I love this recipe. Lemon is one of my favorite flavors. I’ve taken this to nursing homes, church dinners and reunions. For nursing homes, don’t put in nuts. Make sure everyone knows if there are nuts in the cookies.

I love pecans in these cookies. Also, I have gotten lemon icing from the store instead of making this glaze, but the glaze is really good. I don’t know exactly where this recipe comes from. I grind my own zucchini and put two cups in a plastic bag or container, then freeze them to use in the winter. Two cups is what most recipes use.

Zucchini Lemon Cookies

3⁄4 cup sugar

1 1⁄2 sticks butter

2 teaspoons lemon juice

2 cups flour

1 teaspoon soda

1 teaspoon lemon peel, grated

2 cups zucchini

1 egg

2 cups nuts, chopped

• Cream together sugar and butter.

• Add egg and juice.

• Add flour and soda, and mix well.

• Then add the rest of the ingredients and mix well.

• Drop by teaspoonful on a greased cookie sheet.

• Bake at 350 degrees for 10 to 12 minutes.

Glaze

1 cup powdered sugar

2 teaspoons lemon juice

• Mix together and drizzle over cooled cookies.

* Note: May need more powdered sugar.
