I’m always asked for recipes for one or two people. I have this recipe, which I make when I’m out of oatmeal or cereal. Sometimes I also add green peppers, onions, bacon (cooked) or ham.
When eggs are almost set, add the rest of ingredients. You can add it with first microwave setting. There’s so much you can do with this, add whatever you have at home. With the add-ons, you might need a bigger mug. Just try different veggies, fruit or plain, as written. I hope you enjoy this.
Microwave Coffee Mug Scramble
2 tablespoons milk
2 tablespoons cheddar cheese
Salt and pepper
• Coat a 12-ounce, microwave-safe coffee mug with cooking spray. Add eggs and milk, beat until blended. Microwave on high 45 seconds, stir.
• Microwave until eggs are almost set, 30 to 45 seconds, longer.
• Top with cheese, season with salt and pepper.
