TRIED ‘N’ TRUE: Orange muffin recipe similar to restaurant style

TERRE HAUTE — I used to drive a car for a doctor and his wife to Florida, and then go back down in the spring to bring them home again. While I was there, we always ate at a place where they served these muffins. They were so good. I always ordered them. Now that I don’t go down anymore, I’ve been hunting for this muffin recipe. This is as close as I can find. Remember when you make muffins, you don’t mix the batter like when making a cake. Only mix just enough to moisten. They come out lighter.

Orange Muffins

2 cups flour

2⁄3 cup sugar

1 tablespoon baking powder

1⁄2 teaspoon salt

5 tablespoon orange juice

1⁄3 cup milk

1 egg

1⁄3 cup margarine, melted

1 teaspoon vanilla

1⁄4 teaspoon baking soda

1⁄2 cup chopped nuts or1⁄3 cup raisins.

• Combine dry ingredients, mix well.

• In a separate bowl, mix orange juice, milk, egg, melted margarine, vanilla and baking soda, stir or whisk until well blended.

• Combine liquid and dry ingredients, stir in nuts or raisins. Do not over mix, just enough to moistened.

* Pour into a greased muffin tins, fill 2⁄3 full. Can use paper liners.

• Bake 350 degrees for 20 minutes.
