This recipe comes from one of my readers who wanted to remain anonymous. Their grandparents made this chicken all the time, especially when family or friends dropped by their home.
I know everyone has a favorite Italian chicken recipe. I know I do, but it takes so long to make, and it also has a lot more ingredients.
This recipe is so easy and tastes wonderful. It’s also easy to double or make for 1 or 2.
I like to add green peppers and onions to taste, but it’s great as-is.
Easy Italian Chicken
4 boneless chicken breasts
1 can (14 1⁄2 ounces) Italian stewed tomatoes
1 can (4 ounces) mushrooms
1⁄2 teaspoon basil
1⁄4 teaspoon garlic powder
1 tablespoon cornstarch
1⁄3 cup cold water
Hot cooked spaghetti
Spray a large skillet.
Cook chicken for 5-6 minutes on each side or until done. Set aside.
In a saucepan over medium heat, bring tomatoes, mushrooms, basil and garlic powder to a boil.
Combine cornstarch and water; add to tomato mixture.
Return to boil, cook and stir for 2 minutes.
Serve chicken over hot spaghetti; top with sauce.
