As anyone knows, I love muffins. This zucchini adds moisture as some muffins are on the dry side. As this has no sugar with unsweetened applesauce, the only sugar is in cake mix.
Still, I’ll let Gene have one a day. That won’t hurt him. I make a double batch and keep them in the freezer.
Of an evening, I enjoy one outside with tea, coffee or glass of milk.
Zucchini Carrot Muffins
1 package carrot cake mix (18 oz.)
1⁄2 cup unsweetened applesauce
1⁄4 cup oil
11⁄2 cups shredded zucchini
1⁄2 cup raisins
1⁄2 cup nuts
• In bowl, combine cake mix, egg, applesauce, and oil. Mix well. Stir in zucchini, raisins and nuts.
• Fill greased or paper lined muffins 3⁄4 cup full.
• Bake 350 degrees for 2 to 30 minutes or until done.
