Tried 'n' True: Enjoy Cheddar Cheese Fondue for New Year’s celebration

CLARK COUNTY, Ill. With New Year’s upon us now, I thought there would be a lot of parties. Back in the 60s and 70s, everyone was doing fondue. This recipe is a very simple one. You don’t have to have a fondue pot. Just put in a small crock. It is very good. My sister, Penny Nichols, worked at Burr-Brown in Tucson, Ariz. They made a cookbook and she sent me one years ago. This one comes from Maria Machado. Bread is good, also your chips or whatever you like cheese on. Happy New Year. Enjoy.

Cheddar Cheese

Fondue

1 tablespoon mustard

2 tablespoons water

3 tablespoons butter

3 tablespoons flour pepper to taste

1 cup milk

2 cups diced cheddar cheese

French or Italian bread, cubed.

• Combine mustard and water, let stand for 15 minutes.

• Melt butter in a sauce pan over medium heat.

• Cool one minute.

• Remove from heat.

• Slowly stir in milk.

• Return to heat and cook, stirring until mixture boils.

• Add cheese and stir until melted.

• Blend in mustard mixture.

• Transfer to crock pot (small one) or fondue pot.

• Eat by spearing bread cubes with fork and dipping into mixture. Makes four servings.
