This is one of those recipes that is so simple, you wonder, “Why didn’t I think of this sooner?”
With Christmas upon us, everyone loves pumpkin pie or anything with pumpkin. This recipe, also from Reta Bumpus, is great for those who can’t have sugar in their diet.
Why not put this into a graham cracker crust or a regular baked pie crust? Use other combinations of pudding mix and crust to suit other occasions.
Pumpkin Pudding
1 box instant vanilla pudding
1 can pumpkin (small)
1 cup skim milk
1 teaspoon pumpkin pie spice
n Mix all together well.
n Pour into a bowl and refrigerate.
NOTE: I also have used butterscotch pudding.
