Can you believe December is here already? The year went by really fast. We’ve had some sickness and a lot more good health. Thank God.
We are always looking for something different. We have a salad this week, again from Rita Bumpus. You have all these Christmas dinners, also carry-in for your church party. Here is something you can throw together the day before for next day’s party.
Hope you enjoy this as much as we do.
Pineapple Cheese Salad
1 can (large) crushed pineapple
1/2 cup small marshmallows
1 egg, beaten
2 tablespoons sugar
1 tablespoon flour
6 ounces Cheddar cheese, cubed
• Drain pineapple.
• Put juice, beaten egg, sugar and flour in a sauce pan.
• Boil until thick.
• When thick pour over pineapple.
• Cool slightly
• Then stir in marshmallows and cheese.
