Ruth Baker of Marshall, Ill., has been sending me recipes for some months now. I have a lot of rhubarb recipes from her but this last time, she sent several pineapple recipes, among others.
These pineapple cookies sounded so good I tried them. They are to die for; they are so good. I also thought these would be good for Thanksgiving.
Ruth is a very interesting woman with a lot of different recipes. I’ll share others every once in a while. Thanks Ruth.
Pineapple Cookies
1 cup margarine
1 cup sugar
1 cup crushed pineapple, plus juice
4 cups flour, sifted
1/2 teaspoon soda
1 cup light brown sugar
2 eggs
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1 cup chopped nuts
• Cream margarine and sugar.
• Add eggs and beat well.
• Add pineapple with juice and vanilla.
• Sift dry ingredients together.
• Add dry ingredients to mixture above.
• Add nuts.
• Drop by teaspoonful on greased cookie sheets.
• Bake at 350 degrees for 10 to 15 minutes.
