Tried n' True: Muffins with jelly center true comfort food

West Union, IL — Muffins are one of those comfort foods. With a basic recipe, you can do so much. You can add a cup of drained fruit to batter, add nuts, raisins, etc.

When I was home with my brothers and sisters (all five of us), we would enjoy fresh muffins with jelly in the center. That’s still what I like. Now my sons and grandchildren enjoy them.

Not bad for four to five generations to carry on.



Muffins

2 cups flour

1/2 cup sugar

3 teaspoons baking powder

1/2 teaspoon salt

1 egg

3/4 cup milk

1/2 cup margarine

1 cup blueberries or fruit of choice

1 teaspoon jelly of choice

-- Sift dry ingredients together.

-- Mix in egg, milk and margarine; mix well.

-- Add fruit and fold into batter.

-- Fill muffin tins (paper-lined or sprayed with nonstick coating) three-quarters full.

-- Bake at 350 degrees for 20 to 25 minutes.

Note: If using jelly, line your muffin tins with paper and place 1 tablespoon batter in bottom, then add 1 teaspoon jelly on top, then cover with batter to three-quarters full.
