Tried 'n' True: Try pumpkin crisp cookies for Halloween

By Jackie Lindley
Special to the Tribune-Star

West Union, IL With Halloween coming up, I thought maybe you and your children or grandchildren would enjoy making these cookies. They are so much fun!

When I had a Halloween party for 4-H or church, I always had some kids come over and we would make a bunch of cookies and other snack foods for the party.

Do any of you remember the Great Scot grocery stores? They had recipes when you went inside the door. Well, this pumpkin cookie recipe was one of those offered on Oct. 22, 1987. I’ve had it that long.

Pumpkin Crisp Cookies

1/4 pound margarine

1/2 cup sugar

1 egg, beaten

1/2 cup flour

1/4 teaspoon salt

1/2 teaspoon vanilla

1/2 cup nuts, chopped

2 cups Rice Krispies

Food coloring

Sugar

--In medium sauce pan, cook margarine,1/2 cup sugar and egg for 5 minutes over medium heat.

--Add flour gradually, stirring constantly, and cook 5 to 7 minutes longer.

--Remove from heat; add salt, nuts, vanilla and Rice Krispies; mix well.

--Before mixture cools, shape into pumpkins.

--Shake in a bag of sugar, using just enough food coloring (2 drops red and 3 drops yellow) to make orange.

--Decorate faces with candy (gum drops, candy corn or string licorice) or use frosting.
