I try to have recipes that are with the season. This month, apples are really big. They are great fresh but I thought “how about different kinds of apple pies?”
The pie crust is very simple. Or use your own or a store-bought one.
Everyone likes a streusel topping on apples. So this one tops off what I call a marvelous apple pie!
Marvelous Apple Pie
Pat in Pie Crust
11/2 cups flour
2 teaspoons sugar
1 teaspoon salt
1/2 cup canola oil
2 tablespoons whole milk
n Combine first three ingredients. Add oil and milk. Blend well and pat into a 9-inch pie pan. Flute edges. Fill with apple filling.
Apple Filling
6 cups peeled and sliced apples
1/2 cup sugar
3 tablespoons tapioca
2/3 teaspoon cinnamon
2/3 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon lemon juice
• Once blended, add apple slices to mixture. Pour into pie shell and top with streusel.
Streusel Topping
1/2 cup flour
1/4 cup oats
1/2 cup packaged brown sugar
1/2 teaspoon cinnamon
1/2 cup butter
• Combine all ingredients until crumbly. Sprinkle over apple filling. Bake at 425 degrees 40 to 45 minutes or until bubbly. Cover pie with foil for last 10 minutes if the top browns too much.
