Tried 'n' True: Make Tiger (Elephant) Ears with the kids

By Jackie Lindley
Special to the Tribune-Star

When I was a 4-H leader, we were going to need to raise money. Here at West Union, Ill., we had a fall festival up town. The kids tried to think of something to have different. Being cold, we had hot chocolate and hot cider, cookies and we had tiger ears (now called elephant ears). These were smaller. They are so easy. With winter hanging on and the kids having company, this is something they can do. Fun also. Bonnie Strohm had the recipe and gave it to me years ago. Remember to always supervise children around hot oil.

Tiger Ears

2 packages of yeast

1/2 cup lukewarm water

• Dissolve yeast in lukewarm water.

2 teaspoons salt

1/2 cup sugar

2 tablespoons shortening

1 cup of water

1 egg, beaten

• Mix these five ingredients together and add to the yeast mixture.

4-2/3 cups flour

• Add flour 1/2 cup at a time until smooth.

• Break off in small pieces and roll out thin.

• Deep fry until golden brown, turning once.

• Put onto paper towel to drain.

• Sprinkle with cinnamon or powered sugar, pie filling, etc. Use whatever you want.

Hope you enjoy these as much as we have.
