Tried 'n' True: An easy recipe when cooking for just one

---- — I’m always asked if I have any recipes that work for only one person. This is one my mother and Aunt Eloise really like. I use a grill but I have also put it in the oven.

I’ll make these for Sunday after church sometimes when I don’t want to go out to eat. Also, you can put the foil into the crock pot. When using in an oven, bake for 350 degrees, for about 30 to 35 minutes. I have added mushrooms, red or green peppers, or whatever you have. Hope you enjoy this as much as we do. This recipe is for one serving.

Dinner In A Packet

1 (4 ounce) boneless pork loin chop

1 medium potato sliced

1⁄4 cup frozen peas

1 large carrot, sliced

1 tablespoon onion soup mix

• Place the pork chop on a double thickness of heavy-duty aluminum foil, 18-by-14 inches.

• Top with potatoes, carrot and peas.

• Sprinkle with soup mix.

• Seal foil tightly.

• Grill covered over medium heat for 30 to 35 minutes or until the meat juices run clear, turning occasionally.
