Special to the Tribune-Star
A few years ago there was a recipe in the Terre Haute Star for Calico Beans. We tried it and really liked it. So here is my variation.
Back then, we would be in the field at this time of year. I would put this on and turn it on low in a slow cooker. When we came home for supper and cleaned up, everything would be ready. I also made cornbread to put in the oven that evening. We had a good, hot meal when we were ready.
2 pounds hamburger (browned)
1⁄2 cup onion (chopped)
4 strips bacon (or more, if preferred)
1⁄2 cup catsup
2 tablespoon vinegar
1 teaspoon salt
1 can lima beans
1 can red kidney beans
1 can pork and beans
• Do not drain the beans.
• Mix together and cook on low in a slow cooker or bake in a large pan in the oven at 325 degrees for one hour or until done.
