Jim Hunter has given me so many of his wife’s recipes. With zucchini being so plentiful this time of year, I thought I’d share one of them. Jim found a scrapbook where she had collected recipes. She has written whether they are good, Jim’s favorite, or a “no-no.”
I had so much fun going through the book. I even found some obits. One was Gene’s cousin. Mary wrote in this and another one: “Looks good and tastes so real, you’ll want to share this.” Thanks, Jim and Mary.
Mock Apple Butter
4 cups zucchini puree
4 tablespoons vinegar
1 teaspoon lemon juice
2 cups sugar
Dash of allspice
2 drops red food coloring
1 teaspoon cinnamon
• Peel and seed zucchini and chop coarsely.
• Put into blender with vinegar and blend until smooth.
• Pour into saucepan with remaining ingredients and cook stirring constantly, until mixture reaches desired thickness.
• Cool and keep in refrigerator.
