For my last apple recipe this month, I would like to share one from a super lady from West Union, Ill., Charlotte Leasure. She also was a diabetic. My husband looked forward to her apple pie. She put raisins in it. Raisins have sugar. Charlotte lost her battle with cancer this year, so this in her honor. Thank you, Charlotte.
Diabetic Apple Pie
9-inch unbaked pie crust
6 small apples
3/4 cup raisins
1/8 teaspoon nutmeg
2 tablespoons flour
1 teaspoon cinnamon
Peel, core and slice apples into pie crust, add raisins.
Mix nutmeg, flour and cinnamon; sprinkle over raisins.
Cover with second pie crust.
Make slits on top crust to breathe. Put pan under pie for spillage.
Bake 350 degrees about 50 minutes or until apples are tender.
