Tried 'n' True: You can make this rice without coconut

We were living in Perrysville. I was looking for some recipes and I came across this one. It comes from Louise Ingrum, who has lost her fight with cancer.
This recipe, I had tried many years ago. She had brought it to a lunch or picnic or somewhere when I was a little girl.
I remember my brothers didn’t like coconut, so she made this recipe without coconut. Louise also used white or colored mini marshmallows. This is for Louise’s family.
Glorified Rice
1/2 cup water
1 teaspoon margarine
1/4 teaspoon salt
1/2 cup Minute Rice
1 8-oz. can crushed pineapple (drained well)
1 cup coconut
1 cup mini marshmallows
1/4 cup Maraschino cherries (chopped and drained)
13/4 cup Cool Whip
3 tablespoons milk.
• Combine water, margarine and salt in medium saucepan. Bring to a full boil. Stir in rice, cover and remove from heat. Let stand 5 minutes. Fluff with a fork. Cool. Stir in pineapple, coconut, marshmallows and cherries. Fold in Cool Whip and milk. Cover and chill for 1 hour.
