With fresh vegetables coming on and plentiful, I thought I would have recipes that I have used for years and also my kids and grandkids have grown up on.
The recipe for today we really liked when mom made it.
Dad never liked his veggies touching but she got him to eat this — or should I say shamed him, so us kids would eat veggies and fruits.
I hope you enjoy this, also.
Tomato Cucumber Salad
3 medium tomatoes, sliced
1 small cucumber, thinly sliced
1 green onion, chopped
• Layer half of the tomatoes, all of the cucumber and then the remaining tomatoes on a platter.
• Sprinkle the top with green onions.
3 tablespoon Italian salad dressing
1 tablespoon vinegar
4 teaspoon dried basil
Pinch of pepper and garlic salt
• Combine in a jar and shake well.
• Pour over salad.
Makes about four servings — depending on who’s eating. Me, I can eat at least half.
